Come and Get It: A Simple Chicken Soup Dinner for Hot Weather with Fresh Raspberry Gelatin and Bread

When the weather is hot here like it has been recently, sometimes you don’t even feel like eating. You feel more like melting! This simple chicken soup dinner will help you get some extra liquid into your body, is easy on the stomach and refreshing as well.

Simple Chicken Soup

This simple chicken soup recipe is good on its own or you can add to it.  We like the simple version, especially in very hot weather.

Ingredients

  • 1 medium onion chopped
  • 2 carrots peeled and chopped
  • 2 stalks celery chopped
  • 1 tbsp olive oil extra virgin
  • 1 tbsp margarine or butter
  • 32 oz chicken broth
  • 2 cups cooked chicken diced

Instructions

  1. Heat olive oil in medium saucepan. Add onion, carrots, and celery and roast, stirring often till roasted. This should take about 10 minutes. The vegetables will be fragrant and tender. Add the margarine. Allow time for the vegetables to absorb the margarine but do not let them brown.

  2. Add the chicken broth and continue simmering for another 10 minutes, or until the vegetable are thoroughly cooked.

  3. Add cooked, diced chicken. Cook for 1 minute and then remove from heat.

  4. On a hot day: Allow soup to cool for 15-20 minutes before serving. Serve warm. On a cold day, serve hot.

Recipe Notes

A soup on a hot day may seem counter intuitive, but it does help everyone get more liquid in them to stay hydrated. 

 

Make the raspberry gelatin right after lunch so that it has time to set. I used a sugar free raspberry gelatin and added 1 cup of frozen raspberries to it.

We like the Thomas’ Bagel Nooks and Crannies, but any bread would be delightful. We toasted our bagels and ate them with a honey butter mixture or some fresh strawberry jam.

Fresh fruit served chilled from the refrigerator is a nice finish to this meal. We had some freshly picked cherries.
