Simple Chicken Soup

This simple chicken soup recipe is good on its own or you can add to it.  We like the simple version, especially in very hot weather.

Ingredients

  • 1 medium onion chopped
  • 2 carrots peeled and chopped
  • 2 stalks celery chopped
  • 1 tbsp olive oil extra virgin
  • 1 tbsp margarine or butter
  • 32 oz chicken broth
  • 2 cups cooked chicken diced

Instructions

  1. Heat olive oil in medium saucepan. Add onion, carrots, and celery and roast, stirring often till roasted. This should take about 10 minutes. The vegetables will be fragrant and tender. Add the margarine. Allow time for the vegetables to absorb the margarine but do not let them brown.

  2. Add the chicken broth and continue simmering for another 10 minutes, or until the vegetable are thoroughly cooked.

  3. Add cooked, diced chicken. Cook for 1 minute and then remove from heat.

  4. On a hot day: Allow soup to cool for 15-20 minutes before serving. Serve warm. On a cold day, serve hot.

A soup on a hot day may seem counter intuitive, but it does help everyone get more liquid in them to stay hydrated.
