Preheat oven to 375° Spray tube pan with non-stick cooking spray.
Mix 1/2 cup brown sugar with 2 tsp cinnamon in a small bowl. Reserve 2 tablespoons of this mixture to sprinkle on top of batter once the batter has been poured into the pan. Note: The remainder of this mixture will be added to the batter.
In a large mixing bowl, combine all ingredients (sugar, eggs, chopped nuts, baking soda, cooking oil, chopped apples, flour, salt and remaining brown sugar/cinnamon mixture) and stir thoroughly. Batter will be thick.
Pour batter into tube pan. If you use a pan other than a tube pan, you will need to adjust the cooking time.
Sprinkle the reserved brown sugar/cinnaon mixture on top.
Bake in the middle of the oven at 375° for 50 minutes or until a toothpick inserted in the cake comes out clean.
