Chocolate Whipped Cream Filled Angel Food Cake for Jesus’ Birthday
When I was a new bride, Christmastime came around after I had been married about 6 months. I looked up a recipe for Angel food Cake, because our Christmas Eve tradition is to serve this as Jesus’ birthday cake. The recipe called for 11 egg whites. I called my mom and asked her if her recipe called for 11 egg whites as that seemed like a lot of egg whites to me. My mom started giggling, “I use a cake mix.” When I finally purchased my boxed angel food cake mix, I dumped the mix in the bowl, added water and went to get my mixer. I looked through my cabinets. No mixer. I guess I hadn’t gotten one as a wedding gift after all. Our solution? My husband attached a whisk into his variable speed drill and the cake got made.
The chocolate whipped cream is made by stirring together the following:
2 cups whipping cream, very cold from the refrigerator
1/3 cup cocoa powder
3 tablespoons sugar
Whip on high speed with a mixer until the peaks are medium to stiff, about one minute.
Cut the angel food cake horizontally across, about one third of the way from the top as seen in the photo.
Use your fingers to pluck out and remove the cake in order to make a shallow groove in both the top third and the remaining cake. Use the whipped cream to fill this groove
